Fresh vs Dried Herbs
When fresh is substantially better, when dried is actually superior, and the herbs where the choice is genuinely important
At first glance, fresh and dried herbs seem like the same thing in different states. If you have ever tasted fresh lemon balm from the garden and compared it to the dried herb you bought in a bag, you know immediately that they are not.
The choice between fresh and dried is not always significant — for many herbs and many purposes, either form works well and the difference is minor. But for certain herbs and certain preparations, it matters enormously. There are herbs that herbalists specifically seek as fresh plant tinctures because dried preparations are substantially weaker. There are herbs where drying concentrates and improves the medicine. There are herbs where fresh and dried have genuinely different constituent profiles and should be thought of as different medicines.
This article gives you the practical knowledge to make this choice well: the principles behind why fresh and dried differ, the specific categories where the choice is important, and a reference guide to the herbs where your decision will most affect the quality of what you make.
What Happens When Herbs Dry
Drying an herb is not simply removing water. It initiates a cascade of chemical changes that can improve, degrade, or transform the plant’s medicinal profile depending on the herb and how it is handled.
What drying can degrade
Volatile aromatic oils: the compounds responsible for the characteristic scent and many of the medicinal properties of aromatic herbs are volatile — they evaporate readily at room temperature and much more rapidly when heat is applied. Lemon balm’s distinctive lemony fragrance comes from volatile citral and other terpenoids that dissipate significantly during drying, even when the herb is dried carefully. Well-dried lemon balm still has some volatile oil content, but noticeably less than fresh. This is why fresh lemon balm tea tastes and smells dramatically more vivid than a tea made from the dried herb.
Enzymatic compounds and unstable constituents: some plant compounds are not in their final medicinal form in the living plant but are formed by enzymatic reactions triggered by cell damage. The allicin in garlic forms only when the cell is damaged (by chewing or chopping) and enzymes contact their substrate. The fresh plant must be damaged to release the medicinal compound. These enzymatic processes can continue briefly after harvest and then cease once the plant is dried, affecting the final constituent profile.
Chlorophyll and fresh plant characteristics: compounds associated with the living plant — chlorophyll, fresh plant proteins, certain enzymes — either degrade or change character on drying. Fresh plant tinctures capture these compounds in a way that dried plant tinctures cannot.
What drying can improve or concentrate
Concentration of non-volatile constituents: removing water concentrates the non-volatile medicinal compounds relative to the preparation’s volume. A cup of tea made with dried herb contains a more concentrated dose of non-volatile constituents than the same volume of fresh herb. This is why standard dosing in herbal medicine typically uses dried herb.
Conversion of constituents: in ginger, drying converts gingerols (the primary pungent compound in fresh ginger) to shogaols, which have different and in some ways more potent medicinal activity. Fresh and dried ginger are genuinely different medicines, not just the same herb in different states. Fresh ginger is more heating and pungent; dried ginger is more warming and penetrating in a different way, with stronger shogaol activity.
Shelf life and year-round availability: the obvious practical advantage of dried herbs. A properly dried and stored herb retains most of its medicinal value for one to three years, making year-round use of seasonal plants possible.
Standardization and consistency: dried herbs allow more consistent dosing because their water content has been removed, eliminating the variability that comes with the water content of fresh plants (which varies significantly based on growing conditions, time of day, and season).
The Tincturing Question: When Fresh Plant Matters Most
The fresh vs. dried distinction matters most for tinctures. When you make a tincture, the menstruum (usually alcohol) extracts and preserves the herb’s constituents in liquid form. The question is: what was in the plant at the time of extraction?
For most herbs, high-quality dried plant material makes an excellent tincture. The drying process is designed to preserve the relevant constituents, and a well-dried herb tinctures comparably to a fresh plant preparation.
But for certain herbs — particularly those rich in volatile oils or containing unstable compounds that do not survive drying — the fresh plant tincture is significantly more potent and effective. These are the herbs where experienced herbalists specifically seek fresh plant preparations rather than dried plant tinctures, and where the quality difference between a fresh plant tincture and a dried plant tincture is genuinely substantial.
Cleavers (Galium aparine) — the most important fresh-only herb
Cleavers is the herb where the fresh vs. dried distinction matters most dramatically. Fresh cleavers is one of the most effective lymphatic herbs available. Dried cleavers is, in most herbalists’ clinical experience, significantly weaker to the point of being nearly ineffective for lymphatic purposes.
The reason is not fully understood chemically, but appears to involve the degradation of active constituents during drying. The traditional and most effective preparations of cleavers are: fresh plant juice (juice extracted from the fresh plant), fresh plant tincture (the fresh plant tinctured immediately in alcohol), and cold infusion of the fresh plant. If you have access to fresh cleavers, use it. If you are purchasing cleavers, seek specifically a fresh plant tincture from a reputable supplier, not dried herb.
Skullcap (Scutellaria lateriflora) — the quality gap is significant
Skullcap is among the most important nervine herbs for anxiety, tension, and nervous system support. It is also one of the herbs where preparation quality matters most. Experienced herbalists often note that cheaply produced dried skullcap preparations are dramatically less effective than high-quality fresh plant tinctures, and attribute this to: the rapid degradation of skullcap’s active constituents after harvest; adulteration (germander, a look-alike, has sometimes been sold as skullcap); and generally poor handling of dried skullcap in the commercial supply chain.
If skullcap “doesn’t seem to work” for you, the preparation quality is often the explanation. Seek a fresh plant tincture from a reputable small-batch herbalist or supplier, and the difference is often notable.
Lemon balm (Melissa officinalis) — volatile oils degrade significantly
Fresh lemon balm is intensely aromatic — lemon-scented, bright, and vivid. Dried lemon balm has noticeably less aroma, reflecting the volatilization of the terpenoids responsible for both its scent and much of its nervine activity during drying.
For tea use, dried lemon balm is acceptable and widely used, but fresh lemon balm tea is significantly more vibrant and arguably more effective for acute nervine purposes. For tincturing, a fresh plant tincture captures the volatile oil content that the dried plant has already lost.
If you grow lemon balm (and it grows enthusiastically in most gardens — it is essentially invasive), use it fresh as much as possible through the growing season.
St. John’s Wort (Hypericum perforatum) — fresh for tincture and oil
Two of the most important preparations of St. John’s Wort specifically require the fresh plant in flower: the red infused oil and the fresh plant tincture.
St. John’s Wort infused oil is made from the fresh flowering tops infused in olive oil. The characteristic deep red color comes from hypericin and related compounds that are most concentrated in the flowers and buds at the peak of flowering. Dried plant infused oil is significantly less vibrant and generally considered less effective for topical anti-inflammatory use.
Fresh plant tinctures are also preferred by many herbalists. In this case, dried preparations are widely used and clinically effective (particularly standardized extracts for depression), but the fresh flowering top tincture is traditionally prized.
When Dried Is Genuinely Better
Fresh is not always superior. For some herbs, purposes, and preparations, dried is actually the right choice.
- Roots, bark, and hard material: roots and bark are almost always used dried for teas and decoctions, because their cell walls are too dense for most fresh preparations to extract efficiently, and because drying begins to break down the cell structure slightly, making extraction easier. Dried dandelion root, dried ginger, dried valerian root, and dried astragalus root are the standard forms for good reason.
- When fresh is unavailable or impractical: the year-round availability of dried herbs is a genuine advantage. Well-dried elderflower stored properly is an excellent preparation for use through the winter long after the flowers have finished blooming.
- For standardized preparations: the clinical research on many herbs (St. John’s Wort, valerian, hawthorn, ginkgo, milk thistle) was done using standardized dried plant extracts. If you want to use an herb in a way that matches the research, the standardized dried extract is what was studied.
- Freeze-dried preparations: freeze-drying removes water at low temperature and pressure without heat, which preserves volatile constituents that regular drying would degrade. Freeze-dried nettle leaf for allergy support is specifically preferred over heat-dried preparations because the research was done with freeze-dried nettle, and the preparation quality better matches the research.
Dosage Adjustment: Fresh to Dried
Because fresh herbs contain significantly more water than dried herbs, the quantities are not interchangeable one-for-one. A rough conversion:
The fresh-to-dried conversion: As a general rule, use approximately 3 times as much fresh herb as dried herb by weight for equivalent preparations. If a recipe calls for 1 teaspoon of dried herb, use approximately 3 teaspoons (1 tablespoon) of fresh herb. This is a rough approximation — water content varies significantly between species and varies with growing conditions and time of harvest. Fresh ginger, for example, is denser and more concentrated than many leafy fresh herbs, so its ratio is closer to 1:2 rather than 1:3.
For tinctures made from fresh plant material, herbalists typically use a different marc-to-menstruum ratio than for dried plant tinctures, because the water in the fresh plant contributes to the menstruum and dilutes the alcohol. A common approach is to use higher-proof alcohol (95% grain alcohol rather than 80-proof vodka) for fresh plant tinctures, to account for the water added by the plant itself. The standard folk method ratio for fresh plant tinctures is 1 part herb to 2 parts menstruum (1:2) by weight, using high-proof alcohol.

Practical Guidance
How to make good choices in practice:
• For cleavers and skullcap specifically: always seek fresh plant tinctures. These are the herbs where it matters most and the quality difference is most noticeable.
• For aromatic herbs you grow yourself: use them fresh through the growing season whenever possible. Dry only what you need for winter use.
• For roots and bark: dried is standard and appropriate. Do not try to use fresh roots for decoctions unless you specifically have a reason to.
• For St. John’s Wort oil: make it in summer from fresh flowering tops. There is no good substitute for this particular preparation.
• For purchasing: when a fresh plant tincture matters (cleavers, skullcap, lemon balm), look for suppliers that specify “fresh plant tincture” on the label rather than just listing the herb name.
• For garlic as medicine: fresh and raw is where the antimicrobial action lives. Dried or cooked garlic is nutritive but not antimicrobial in the same way.
• For ginger: recognize that fresh and dried ginger are genuinely different medicines. Fresh for nausea, warming, and digestive support. Dried for deeper warming, circulation, and when you want more concentrated shogaol activity.
The difference between fresh and dried
is not always the difference between better and worse.
It is the difference between different.
